Today's Sunday meal is all about stirring it up with Quinoa, Tofurkey and Roasted Carrots the Roc-A-Natural way:
- Stewed Tofurkey with Kale & Lentil
1 pack of Tofurkey, sliced
1 onion and hot pepper, sliced
2 cups of Kale
1 cup of Lentil Salad
1/4 cup of Olive Oil
1 T of Better Than Bouillon Roasted Chicken Base
1 T of Teriyaki Sauce
1 cup of hot water
Sautee first 3 ingredients in Olive oil until Tofurkey is lightly browned. Add remaining ingredients. Cover and cook on low heat until Kale is completely cooked.
- Black Beans and Tri-Color Quinoa
1 cup of Tri-Color Quinoa
2 cups of hot water
1 tsp of butter
1 T of Better Than Bouillon Roasted Chicken Base
1 cup of black beans, rinsed
Cook Tri-Color Quinoa as directed. Fold in black beans.
- Roasted Carrots
6-8 large carrots(Washed and cut on an angle). Pat dry and lay in a pan and sprinkle with Olive Oil. Add Sea Salt and Cinnamon. Toss well and bake on 350 degrees for about 45 mins or until soft and lightly browned. Drizzle with Organic Agave in the Raw.
Turn off oven and let sit for about 15 mins
